1. Hot Cross Bun Loaf

A modern take on the Easter classic! This loaf combines everything you love about hot cross buns - fragrant spices, bursts of fruit, soft texture - in an easy-to-slice format. Perfect for breakfast, brunch, or a sweet afternoon pick-me-up.

INGREDIENTS

    • 500g strong white bread flour

    • 1 tsp ground mixed spice

    • 2½ tsp ground cinnamon

    • A good grating of whole nutmeg

    • 1 x 7g sachet fast-action dried yeast

    • 60g caster sugar

    • 150ml whole milk

    • 60g butter, melted and cooled, plus extra for greasing

    • 1 large egg, beaten

    • 75g dried cherries, roughly chopped

    • 40g chopped mixed peel

    • 40g sultanas

For the cross

    • 3 tbsp plain flour

    • 2 tbsp water

For the glaze

    • 2 tbsp granulated sugar

    • 2 tbsp water

METHOD

    1. In a large bowl, combine the flour, mixed spice, cinnamon, nutmeg, yeast, and sugar.

    2. Warm the milk until just steaming, then mix in the melted butter. Allow to cool slightly.

    3. Add the milk mixture and beaten egg to the dry ingredients, mixing to form a soft dough.

    4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.

    5. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.

    6. Knock back the dough and knead in the dried cherries, mixed peel, and sultanas.

    7. Shape the dough into a 4 Portion Silicone Mould Tray. Cover and let it rise for another 30–45 minutes.

    8. Preheat the oven to 200°C (180°C fan-forced).

    9. Mix the plain flour and water to make a paste, then pipe crosses over the top of the loaf.

    10. Bake for 35–40 minutes until golden brown and cooked through.

    11. While the loaf is baking, prepare the glaze by dissolving the sugar in water over low heat.

    12. Brush the hot loaf with the glaze as soon as it comes out of the oven.

    13. Allow to cool slightly before slicing and serving.

Pro Tip: Toast a slice and top it with a little butter or coconut spread for the ultimate Easter brekkie.
