INGREDIENTS
-
-
500g strong white bread flour
-
1 tsp ground mixed spice
-
2½ tsp ground cinnamon
-
A good grating of whole nutmeg
-
1 x 7g sachet fast-action dried yeast
-
60g caster sugar
-
150ml whole milk
-
60g butter, melted and cooled, plus extra for greasing
-
1 large egg, beaten
-
75g dried cherries, roughly chopped
-
40g chopped mixed peel
-
40g sultanas
-
For the cross
-
-
3 tbsp plain flour
-
2 tbsp water
-
For the glaze
-
-
2 tbsp granulated sugar
-
2 tbsp water
-
METHOD
-
-
In a large bowl, combine the flour, mixed spice, cinnamon, nutmeg, yeast, and sugar.
-
Warm the milk until just steaming, then mix in the melted butter. Allow to cool slightly.
-
Add the milk mixture and beaten egg to the dry ingredients, mixing to form a soft dough.
-
Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
-
Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
-
Knock back the dough and knead in the dried cherries, mixed peel, and sultanas.
-
Shape the dough into a 4 Portion Silicone Mould Tray. Cover and let it rise for another 30–45 minutes.
-
Preheat the oven to 200°C (180°C fan-forced).
-
Mix the plain flour and water to make a paste, then pipe crosses over the top of the loaf.
-
Bake for 35–40 minutes until golden brown and cooked through.
-
While the loaf is baking, prepare the glaze by dissolving the sugar in water over low heat.
-
Brush the hot loaf with the glaze as soon as it comes out of the oven.
-
Allow to cool slightly before slicing and serving.
-
Pro Tip: Toast a slice and top it with a little butter or coconut spread for the ultimate Easter brekkie.
