Easy Veggie Pasta

A wholesome simple pasta dish that is great for meal prep! Perfect for lunches and the kids dinners, this recipe will become a staple!


INGREDIENTS
2x Punnets Cherry Tomatoes
Olive oil
Salt
Mexican Dried Spices
100ml Cooking Cream
350g Spiral Pasta
Handful Baby Spinach
Parmesan Cheese, grated

METHOD
- Preheat oven to 180 degrees.
- Place the tomatoes into the Seed & Sprout Glass Food Storage Containers
- Drizzle a little olive oil, salt and Mexican spices over the top.
- Pop in oven for 20 minutes or until tomatoes have softened in the centre.
- Meanwhile, cook the pasta as per instructions - drain and put aside.
- Take the tomatoes out when cooked and gently squish them
- Add the cream into the tomatoes, baby spinach and pasta.
- Give a mix through and grate Parmesan cheese on top. (or a vegan cheese of your choice)

Serve and enjoy, or take to school or pack for the kid lunches the next day.
