Seed & Sprout Team Approved, Easy ANZAC Slice

It's 25th April in Australia and that means the annual ANZAC biscuit bake off is in full swing.   The humble biscuit does raise some questions; are they better crispy or slightly under baked?  Should an ANZAC slide be a "thing"?  

Well we got experimenting and created both a biscuit and a (slightly) controversial new slice edition that was the hands down winner with our hungry Warehouse Crew!

- Glass Food Containers - Rectangle with Bamboo Lids 

- Un-Plastic Pegs 

 

ANZAC Slice Recipe

Prep Tim: 25 mins

Makes: 10-15 slices
Ingredients: 9 
Difficulty rating: simple!


Ingredients: 
1 1/4 cups of plain flour
1 1/4 cups rolled oats (not quick oats!) 
1 cup coconut sugar 
1 cup shredded coconut
Pinch of salt 
150 grams unsalted butter
2 tablespoons golden syrup (honey substitute)
1/2 bicarb soda
2 tablespoons boiling water 

 
Method

1. Prep your slice dish: we used the 2600ml Rectangle dish and lined it with Rectangle Un-Baking Paper.  Tip: secure the Un-Baking Paper with Un-Plastic Pegs (these are metal and can go in the oven!) to ensure you have a good cover. No greasing needed and there's literally NO WASTE!

Un-Baking Paper Hack Pegs Zero Waste2. Turn on oven to 180 degrees (can be cooked in the Air Fryer but we didn't test this method).
3. Mix all dry ingredients (flour, coconut, shredded coconut) together in a bowl
4. Place chopped butter, sugar, syrup & boiling water into a pot and heat over low heat.  Alternatively heat in microwave but we careful not to burn the butter.
5. Once butter is melted add bicarb soda and watch it fizz up.  Stir well to ensure it's mixed through (don't put too much bi carb in - it can impact the taste).
6. Add melted butter into dry ingredients and stir well
7. Place the mixture into your prepared slice dish and push down the ingredients so it is compacted.  Optional: if you like salty sweets - sprinkle some salt on the top to counter the sweetness of the golden syrup.
8. Place in the oven for 30 mins (set a timer for 25 and check).  Depending on how you like your ANZAC biscuits - crispier will take a bit longer.
9. Remove from oven and allow to cool well before cutting into slices.
10. Keep in the fridge with the sealed lid - these won't last long!! 
Our testing team was our awesome Warehouse Crew and they absolutely LOVED this recipe.  There was literally crumbs left hehe! 
PS - if you're keen to make the biscuit version same preparation applies and bake on a baking tray instead of a dish for slightly shorter (depending on your preference for crispy vs. soft).
