Creamy Sweet Potato & Coconut Soup
Ingredients:

2 large sweet potatoes, peeled & diced

1 brown onion, chopped

2 garlic cloves, minced

1 tsp ground ginger

1 tsp turmeric

400ml coconut milk

2 cups vegetable broth
-
Salt & pepper to taste

Method:
Add all ingredients to a slow cooker or pot. Cook on low for 6-7 hours or until veggies are soft. Blend until smooth. Store in our Silicone Freezer Moulds and freeze until needed.
Hearty Lentil & Veggie Stew
Ingredients:

1 cup green or brown lentils, rinsed

2 carrots, diced

2 celery stalks, chopped

1 zucchini, diced

3 cups veggie stock

1 tsp cumin, 1 tsp paprika

Method:

2 cans chickpeas, drained

1 tin chopped tomatoes

1 onion, chopped

1 tbsp curry paste

1 cup coconut milk

2 cups baby spinach

Method: Cook all ingredients except spinach in the slow cooker on low for 6 hours. Stir in spinach at the end. Store in Glass Meal Prep Containers or Silicone Food Pouches.
Minestrone with a Twist
Ingredients:

1 potato, cubed

1 tin cannellini beans

4 cups veggie broth
